Low-carb keto roll Budapest, with raspberries, cream and grated hazelnuts.

Dough

3 egg whites

50 g grated hazelnuts

½ tsp vanilla extract

Filling

200 g heavy cream

50 g raspberries

Glaze

30 g dark chocolate without sugar (minimum 80% cocoa)

Whisk the egg whites in a bowl until frothy.

Add erythritol gradually and continue whisking.

Place almond flour and grated hazelnuts in another bowl and stir.

Transfer dry ingredients to egg mixture and add vanilla extract. Stir well until smooth.
