The Swedes, who are famous for low-carb diets, are very fond of stuffed eggs. On Russian tables, eggs are usually with caviar, which is also great for a keto-New Year's table. But, you know, I'm tired of it already. The same stuffed eggs do not climb into me every year. And from the Swedes, I found an option with shrimps for their "yulboard". This is a traditional Christmas buffet and eggs are a must. So, what and how do Swedes stuff eggs with:
- 8 eggs
- 1 dl (100 ml) quark (something like 4% thick Greek yogurt (I would change to 42% sour cream, this would be the keto version)
- ⅓ cups of shrimp (at the rate of 1 shrimp for 1 half egg, that is, 16 shrimp)
- 2 tablespoons red caviar
- 2 tablespoons dill, chopped
- 1 teaspoon salt
- 1/4 tsp black pepper
Boil the eggs. Peel and halve them. Season them with a small lump of sour cream / yogurt mixture with dill, salt and pepper. Top with caviar and shrimp, a little more dill.
